BBQ Silver Perch
You can use Silver or Jade Perch
Spray olive oil (only because it is easier to apply)
If I don’t have spray oil handy I pour small amount of oil into a plastic bag place the fillets in to the bag and shake the fillets around carefully until they are covered with the oil.
4 x small silver or jade perch fillets or whatever size they are when removed from your tank.
4 large thick onion rings (These are grown in our grow beds)
2 capsicum Sliced (These are grown in our grow beds)
Add more ingredients if your fish is larger, this is based on roughly a 500 g fish (1 lb) roughly a 200 g (8 oz) fillet
1 teaspoon finely grated orange zest (not grown in our grow beds )
1 teaspoon finely grated lemon zest (also grown in our grow beds )
1 teaspoon minced garlic (grown in our grow beds but for simplicity sake we sometimes just use the mince garlic from the store)
1 teaspoon minced ginger(we have to get this from the shop at the moment but planning on putting some space aside in the grow beds to try growing our own ginger)
salt and pepper to taste
80ml (5 Tbsp + 1 tsp) (1/3 cup) virgin olive oil
80ml (5 Tbsp + 1 tsp) (1/3 cup) lemon juice
80ml (5 Tbsp + 1 tsp) (1/3 cup) orange juice
Spray the fish fillets with olive oil — and set to one side. Spray the Capsicum and onion and cook over medium heat. Put the fish on, cut side down, cover with foil and cook over medium heat until cooked through.
Make the dressing by whisking the oil and juice into the zest, garlic, Ginger, salt and pepper
place the onion rings in the middle of each plate with capsicum slices. Add fish, spoon over the dressing and serve.
